Blend the tomato with the onion, the previously hydrated chipotle (without veins and without seeds), the garlic, the vegetable broth, the salt with the onion and the water.
In a pot, bring the tomato mixture to a boil, add the cut spaghetti, cook over medium heat for 10 minutes
Serve.
Decorate with a little Cotija Cheese, cream and avocado.
